Gluten-free Brown Rice Bread Ingredients:
Goglufree Brown Rice Bread Flour - 400g
Yeast - 8g (please prepare your Own)
Sugar- 3g (for fermentation purpose only)
Warm Water - 300g (40-50 degrees Celsius or 200ml water/100ml hot Water)
Eggs - 2 (large)
Vegetable Oil - 5g (rice bran oil/olive oil or Coconut Oil)
Salt - 2g (optional)
Vinegar - 3g (apple cider vinegar/rice vinegar/lemon)
*Tips:
- If you use low sugar or sugar-free yeast, you don't need to add sugar, Just add the yeast directly to the bread flour.
- You can adjust the amount of yeast according to your preference. If you don't like a strong yeast flavor, you can reduce the amount, but the fermentation time may be longer.
- Salt is optional and can be added according to your taste. (This recipe does not include salt, but you can add it directly to the bread flour if desired).
Step 1:
Pour the bread flour into the bread machine. If you are adding salt, you can add it at this time. Then, pour the yeast powder vegetable oil , sugar and warm water into the machine.
Step 2:
Set the bread machine to the "Gluten-Free" setting and choose the desired crust colour (I selected "P-Medium" here). Then, let the bread machine take care of the rest of the process.
*Friendly reminder: The gluten-free dough may have a higher viscosity, and the mixing paddle in the bread machine may be too small. Therefore, at the beginning, you may need to use a dough spatula to assist with the mixing.
Step 3:
After mixing the dough evenly (about 5 minutes), I then add the eggs and vinegar together and continue mixing.
After the dough has been mixed evenly (approximately 1 hour and 20 minutes), the bread machine will automatically stop and enter another stage of fermentation.
Once the setting is completed, the bread machine will naturally make a "sound" notification. If you feel that the bread is not sufficiently browned, you can continue baking for another hour or so.
In summary, the invention of the bread machine was for the sake of convenience and it offers a "lazy cook" approach. However, the only drawback is that the mixing paddle is too small, resulting in a less refined texture of the bread. The taste of the bread is not bad, but it may be rougher compared to the previous two versions, and it also requires double the time.
The bread machine I have is considered an "old-timer," so its performance may not be ideal. Nowadays, there are many bread machine models available in the market with more advanced features, which may offer improved baking time and texture.
