Gluten-free Brown Rice Bread Ingredients:
Goglufree Brown Rice Bread Flour - 400g
Yeast - 8g (please prepare your Own)
Sugar- 3g (for fermentation purpose only)
Warm Water - 300g (40-50 degrees Celsius or 200ml water/100ml hot Water)
Eggs - 2 (large)
Vegetable Oil - 5g (rice bran oil/olive oil or Coconut Oil)
Salt - 2g (optional)
Vinegar - 3g (apple cider vinegar/rice vinegar/lemon)
*Tips:
- If you use low sugar or sugar-free yeast, you don't need to add sugar, Just add the yeast directly to the bread flour.
- You can adjust the amount of yeast according to your preference. If you don't like a strong yeast flavor, you can reduce the amount, but the fermentation time may be longer.
- Salt is optional and can be added according to your taste. (This recipe does not include salt, but you can add it directly to the bread flour if desired).
Step 1:
Pour the bread flour into the stand mixer (if you use salt, add it now), then pour in the yeast powder, sugar , vegetable oil and warm water.
Step 2:
Attach the paddle attachment (same as shown in the picture), then mix on medium speed for 1 minute.
Step 3:
Next, prepare two eggs and gradually add them while the mixer runs at medium speed (one at a time). Mix at medium speed until the batter becomes smooth (approximately 2-3 minutes).
Step 4:
After stopping the mixer, use a spatula to scrape the sides of the batter and mix it evenly, ensuring that all the ingredients are well incorporated. This step is necessary to prevent unmixed portions from remaining in the batter.
Step 5:
Add the vinegar to the batter and mix it at high speed until it is well blended, and the batter becomes smooth, which usually takes about one minute.
*Friendly tip:
The addition of vinegar helps maintain the proper acid-alkaline balance in the batter, promotes yeast activity and batter development, and contributes to the fluffiness and texture of the bread.
Step 6:
Grease the sides of the bread baking pan to make it easier to remove the bread after baking. Then, prepare a piece of parchment paper to cover the opening of the pan to prevent the batter from spilling out.
Step 7:
Carefully pour the batter into the greased baking pan and spread it evenly using two spatulas. The batter may be sticky and difficult to handle, so you can lightly oil the spatulas to reduce stickiness.

Step 8:
Flattening the batter is the most challenging step in the process, so I suggest using a spatula with a concave surface, as it will make it easier. Once the batter is evenly spread, you can move the baking pan to a draft-free location for fermentation.
The fermentation speed depends on the amount of yeast used. Following the recipe's yeast quantity (8g), fermentation can be completed in approximately 40 minutes.
*Friendly reminder:
If you want to ferment the dough quickly, you can use the oven for fermentation. You can set the oven temperature to around 35-40 degrees Celsius. This temperature range can accelerate the yeast's activity and promote dough fermentation. Please ensure not to exceed the yeast's tolerance range, as it may negatively impact the dough's quality.
Step 10:
When the dough has fermented to about 80%, you can preheat the oven (10-20 minutes/180 degrees Celsius/top and bottom heat), depending on your oven. (If you used the oven for fermentation, please remove the bread first and then preheat the oven.)
It takes about 10 minutes to complete the preheating process in my oven. Then, place the dough in the oven:
180 degrees Celsius
Setting: Top and bottom
HeatTime: 40 minutes.
