Gluten Free Apam Balik
Ingredients (for 3-4 pieces):
- Goglufree Brown Rice Bread Mix Flour - 100g
- Warm water - 130g (50g hot / 80g cold)
- Yeast - 2g
- Sugar - 10g
- Oil - 3g
- Egg - 1
Filling:
- Crushed peanuts or walnuts - as needed
- Sweet Corn - as needed
- Sugar - white or brown sugar - as needed
Tips: If you want to make more portions, just double the ingredients in the recipe.
*If you're allergic to yeast, you can use baking powder as a replacement (1-3g - adjust to taste) or omit it, but the texture may be slightly different.
Utensils: 20cm frying pan
Step 1:
Pour all the ingredients into a bowl at once.
Next, use a manual whisk (or an electric one) to whisk the batter until it becomes smooth.
Then, cover the bowl and let the batter ferment for 15-20 minutes.
Once the batter has doubled in size, stir it again until it returns to a smooth consistency.
No need to preheat the baking pan. If the pan is too hot, the batter can easily come off the pan, so you can directly spread the batter on the pan and spread it evenly.
Turn on low heat and sprinkle with an appropriate amount of sugar.
Cover with a lid for 1-2 minutes, then sprinkle with an appropriate amount of crushed peanuts and corn paste.
Before serving, you can add a small piece of butter, it will enhance the flavor!
If you like to add eggs, you can crack an egg over it after sprinkling the sugar, then mix it well, cover with a lid, and cook over medium heat for about 1-2 minutes.
Sprinkle some crushed peanuts or walnuts, and before serving, add a small piece of butter for extra flavor. Enjoy!
